Recipes for Asian Style Salmon and Zucchini Bake

1 Tbsp. Dijon mustard
1 Tbsp. Coconut or liquid aminos
1 Tbsp. Avocado Oil
1 Tbsp. Minced garlic
1 Tbsp. Lemon juice
Freshly grated ginger to taste
3 6 oz. Salmon Filets (fresh or thawed)
1.Whisk together mustard, aminos, avocado oil and lemon juice. Mix in mixed garlic and ginger.
2.Drizzle the mixture over the salmon and allow it to sit for 10-15 min to marinate.
3.Heat a pan up nice and high.
4. Place fish skin side down and any extra marinade on top.
5. Cook undisturbed for about 4 min. Flip fish over and cook for another 4 min or until your desired doneness.
Zucchini Bake
2 medium zucchini, cut into half-moon slices
2 medium yellow squash, cut into half-moon slices
4 Tbsp. chopped fresh basil or dried mixed herbs (depending on your personal preference)
2 Tbsp. shallots (or choice of onion)
3/4 tsp garlic powder
1 cup shredded mozzarella cheese
