Passover recipes mix the old with the new

Traditions will be honored at each Seder when Passover begins on Saturday, March 27. Though it’s likely seats will still be emply as the pandemic continues to alter holy days.

I’m sharing the recipe for the Almond Macaroons that I always make to bring to my friend Shelly’s Seder. They are thin treats and thin is the important word after a Passover feast.

The recipe comes from Providence’s own Joan Nathan. It was in her 2011 cookbook “Quiches, Kugels, and Couscous: My Search for Jewish Cooking in France” (Knopf).

As for the quinoa recipe, it comes from Danielle Renov. She said it is up for debate whether this is, in fact, a salad at all.

“It’s healthy, colorful, has fruits and vegetables in it, and I serve it alongside a protein. so now it’s a salad,” she wrote.
